SUMMARY:
Capture better stdout - ex. prints, logs.
Ideally want to run if we can set gha to set to debug mode - but tests are generally fast so should be ok for it to have more log output in the general case.
[TODO]: would be nice to just enable it when rerunning on debug mode.
