chore(actions): Bump Prowler version on release

Context

As part of our release procedure, we want to automate as much as possible.

Description

Automatically bump Prowler version after each release.

Tests

• chore(release): Bump version to v5.0.11 test-actions#16 bump to 5.0.11 from 5.0.10 just in v5.0 branch
• chore(release): Bump version to v5.3.0 test-actions#17 bump 5.3.0 from 5.2.0 in main branch
