Sleep Ensemble 1.0.3

Rolled back changes to freeze sleepens to specific dependency versions. While sleepens could be easily updated to newer versions, it would be limited to Python 3.9 only at this time. More importantly, pre-trained models would no longer be compatible and need to be re-trained - this may be done at a later point with an updated repository.
