In the interest of moving forward, I'll go ahead and merge this as 51 (42+9) workflows have completed, with only the slow Cygwin ones (not influenced by the PR) still going on. CI summary - a short one:

This PR adds frame pointer workflows for 5.1 and trunk/5.2.
I initially created these as an experiment, but they've already proved their worth in pinpointing a tricky bug ocaml/ocaml#12535
