Improve Solr schema and minor updates

Updates to extension versions:

• Updated Geoview extension version from v0.2.0 to v0.2.2 in ckan/Dockerfile.

Configuration changes:

• Added a new core setting for ckan.display_timezone in ckan/docker-entrypoint.d/01_setup_ckanext_config.sh.
• Updated the CKANEXT__OPENAPI__ENDPOINTS configuration in .env.example to remove the language-specific title suffix for the CKAN API.

Solr schema updates:

• Added new fields endpoint_url and serves_dataset to the Solr schema in solr/Dockerfile.spatial.
