Better API Documentation

TODO:

• Provide a little more information on the "Overview" page
  • Maybe a "getting started" section and a section that explains more "advanced" features such as type expansion
• Model descriptions
  • Right now, all of our model (schema) description just says {model name} model. e.g. Organization model (https://bank.hackclub.com/docs/api/v3/schemas/Organization)
    
    I've been trying to figure out how to override that default description with no luck. I know it's possible, but it's not documented at all

    • Don't overwrite model description with the route description. ruby-grape/grape-swagger#804
