- Adapted to use the new release job: https://ci.eclipse.org/jersey/job/jersey-release/
- No need to have multiple JDK versions to compile multirelease jars
- release defines the target release
- Maven plugins improved, now they can compile "main" code and "plug in" additional sources built for different Java versions.
- That means that minimal JDK version used to build Jersey is the maximal version of "multireleased" sources.
- Fixed NPE seen in tests, however there are more.
- Removed some duplicit or unused garbage from poms.

- Jenkinsfile now compiles and tests with JDK25, then tests selected modules with 17 for sure - Removed java.version usages - quite toxic to set it - Removed copy pasted compiler settings (some of) - Minimal Maven version set to 3.9.16 - Minimal JDK version is 17 (to run tests without recompilation), to release 21.
