Context

Current docs reference placeholder assets in file_organizer_v2/docs/assets/ (SVGs and a demo GIF). We want real captures of the Textual UI so the README, user guide, and tutorials show actual UI states.

Scope

• Capture TUI screenshots for key views (Files, Analytics, Audio, History, Copilot, Methodology).
• Record a short demo GIF showing navigation and a simple workflow.
• Replace placeholder assets in file_organizer_v2/docs/assets/.
• Keep relative paths in all docs (no absolute paths).
