Summary
This PR add support for platform specific assets. This was previously removed in initial V5 PR because Metro officially doesn't support it.
There is unofficial support for platform extensions for assets as long as there is a base assets without platform extension as well, as shown here: facebook/react-native#31099
This exact behaviour was implemented in this PR in order to provide maximum compatibility with the ecosystem. Popular library example includes React Navigation - link
