feat: integrated with codecov for coverage

Description

This PR introduces a new integration with codecov to generate and publish code coverage for our mono-repo. It creates detailed coverage report for each pull requests to a particular target branch(main, production etc) and submits them to codecov which is provided by Sentry. Codecov is recommended solution used widely under Auth0 Public repositories like (Auth0-js sdk etc).

Provide details that support your chosen implementation, including: breaking changes, alternatives considered, changes to the API, etc.

If the UI is being changed, please provide screenshots.
