Update README.md
Replaced `v1_18Up` implementation with specific versions for v1_18, v1_18_R2, v1_19_R2, and newer. Updated `ChunkDataProviderResolver` to handle these versions accordingly. Added support for 1.21.2
The Spigot API version has been updated from `1.21-R0.1-SNAPSHOT` to `1.21.2-R0.1-SNAPSHOT`.
Remove manual trigger, specify branch and target folder for deployment. This ensures Javadocs are deployed to the correct location automatically upon pushing to the production branch.
