[FEATURE]: Add an option for colored logs

Background

#3433 removes colors from logs.

There's a suggestion to have option/env var to restore colors back.

Relevant place in code to restore colors is in the PR above.

Feature Request

Either:

• add a flag to enable colors
• add env var to enable colors
• do nothing

I think there's no need to have colored logs, but I in #3433 I was asked to create an issue.
