This is an issue we have faced since when we used Pulseaudio. And it remains without a good solution in PipeWire too. As far as I know there is no way to tell the audio server "never consider our devices as default candidates". If there is nothing else it will use ours.

That being said in a system without microphones the user probably has no reason to bother with easyeffects microphone effects pipeline. So you can just ignore the whole thing in this case.
