Change Sector fields on registration and user profile page

We need to change the Sector values on the new users and edit user profile forms.

Changes needed are documented here

Questions

• Requires a FE (and BE?) updates changes.
• How do we map existing user's sector selections?

@yellowcap would this require a BE change as well on the user table?

@yellowcap The sector field values are stored here: https://github.com/wri/project-zeno/blob/main/src/api/user_profile_configs/sectors.py#L3-L15 and then sent to the frontend. It should be a simple string fix on the backend and we can pull it on the next deployment.

@kamicut @01painadam - if we don't need to change the "keys" on the backend and just the display values, then it is just simple string changes on the backend and everything should work just fine - looking at the changes here, they don't seem to change the meaning of things substantively, so it should be fine to just map existing users to the new values? If we some-how do need to keep a track of the original value that the user saved, then this gets more complex - if we can just change the labels and have them change for older and newer users, then just changing the labels strings in https://github.com/wri/project-zeno/blob/main/src/api/user_profile_configs/sectors.py#L3-L15 while keeping the keys the same should "just work".
