[Bug Report][3.8.7] VDataTable VSelect's have hardcoded variants, custom styling is difficult

Environment

Vuetify Version: 3.8.7
Vue Version: 3.5.15
Browsers: Chrome 136.0.0.0
OS: Windows 10

Steps to reproduce

it shows variant underline by default, would be better to leave the variant blank. as shown in the play link.

vuetify.js:

defaults: {
VSelect: {
      variant: 'outlined',
      color:  'primary',
      baseColor: 'primary',
      bgColor: 'primary-lighten-4',
      density: 'compact',
    },
}

Expected Behavior

variant: outlined is applied to the Sort by Dropdown in mobile mode of v-data-table

Actual Behavior

variant: underline is applied by default and will not be replaced by defaults in VuetifyOptions
