[EPIC] VCell GUI must adhere to new UConn Health Accessibility Guidelines

Due to newly implemented accessibility policies introduced at UConn Health, we need to take steps to ensure all our GUI components are satisfactorily displayed, and use color blind pallets - both for dark and light modes.

This is a massive endeavor, as we generally have been "laissez-faire" with GUI-development, adding and fixing only as needed.

Sub-issues will be added as we come across them. A new label "Accessibility Requirement" will be added to related issues.
