Evaluate Activitysim Dependency

The code currently depends on Activitysim 1.2.1, which limits the python version to 3.11. This prevents the package from being used in the same environment as the latest Populationsim release. Some thoughts:

• Move dependency to Populationsim , which has similar functionality.
• Borrow from latest version of Activitysim, which uses a parquet pipeline. Maybe the best thing is to not be dependent on either package

The newest version of ActivitySim replaced Orca with Pypyr which seems like the best route to go for this project instead of using ActicitySim or PopulationSim as a dependency. It's super simple to use and set up so it seems like a perfect fit for this project.
