Add default gruvbox theme to lazyvim

• LazyVim comes pre-installed with the tokyo-night theme, but the terminal, Starship prompt, and Doom Emacs is set to gruvbox

The solution to this could be to add:

to .config/nvim/lua/plugins/colorscheme.lua

However, it could be much extensible in the future if we did a Plan3 Distribution of the LazyVim Starter template.

Starter template has not been modifed by the LazyVim devs in a year.

This actually is good news as this could be sign of it being static and less prone to issues of future incompatibility.
