Updating for v9

👋 I'm Mustafa, I would like to help with pino v9 update pinojs/pino#1762

For this package the downloads and commit history both seem to be very active:

• 18K weekly downloads & 600K downloads for the last year https://npm-stat.com/charts.html?package=pino-elasticsearch&from=2023-04-23&to=2024-04-23
• Last commit was 3 weeks ago from the time of writing this

Regarding using tap and updating the CI to Github actions, no work is needed since they're both already used here.
It seems like Node 16 support was already dropped since the CI file run tests on versions [18, 20].
I just updated the dependencies for the latest version and ran the tests and everything seems to work perfectly.

But please feel free to let me know if any work is needed
