While extending the Lin Bytes test in #521 I realized that the STM tests are rather limited, as they currently target only 7 bindings in the Bytes module.

An expanded model helps ensure that these many Bytes bindings act according to the documentation, which is outside the scope of Lin tests.

#547 increased the coverage, albeit they still don't cover everything 🤷
