+1 - trying mitamae on windows but it errors on mruby-open3

You could get around this particular problem for mitamae itamae-kitchen/mitamae#98 (comment). According to what I said at that time, it seems cross compilation of mruby-onig-regexp seems to be the only blocker. We could also try building it on Windows using GitHub Actions, but I already invested more time on the pull request than I wanted because I use Windows only for a few days per year.

You're more than welcome to fix mruby-onig-regexp cross compilation for Windows. Once it's supported, maybe we can support mitamae on Windows first, and then work on this issue to improve the experience.
