LVGL updated by Zephyr 4.1

With Zephyr 4.1 the LVGL version got updated to 9.3.0 and this shield is no longer compatible.

Hi, I haven't started updating to 4.1 yet. First, I want to make sure this update is tested and has as few bugs as possible.
