release: v3.0.2 — hardening bump

Bumps VERSION and plugin.json to 3.0.2 to match the v3.0.2 release tag.
All the hardening changes live in commit 0db60c4 (previous commit); this
commit exists only to align the version files so CI consistency passes and
the tag points at a tree where VERSION = tag name.
