Where the data stores when we use sessions.NewCookieStore

I've tried like the document said, it did work. But I am confused about where the session data stores. I found that this session could be available if the server is restarted which means it was not stored in memory.

You are referring to this example

as you see in the example imports block that sessions is this library https://github.com/gorilla/sessions

  "github.com/labstack/echo-contrib/session"
)

that session store is stored in middleware function and exists until that function object is garbage collected.
Session for requests middleware is stored in cookie store within that request context

and session.Get("<session_name>", c) helper method is used to extract session from context and store
