Rename and reorganize the LLMInferenceService inference gateway documentation so its structure reflects the Gateway API Inference Extension instead of a single implementation. Add an inference gateways overview and group the Envoy AI Gateway and agentgateway guides beneath it.

The current page title and llmisvc-envoy-ai-gateway path describe different scopes, and the flat navigation does not scale as more inference gateway implementations are documented.
