Ability to customize the BLE Appearance

I want to be able to customize the server BLE appearance as defined by the Bluetooth Assigned Numbers Chapter 2.3 Common Data Types:

Available Appearance Category ranges are described in chapter 2.6.2

I would like an option as for manufacturer data to be available

I'll have to dive into this later; however, at first glance, I don't believe modifying the manufacturer data is possible on Windows and Mac. Possibly on Linux, but this is a hardware-level detail you might need to implement on a microcontroller since OS-level access is largely protected. I welcome any evidence against this and would otherwise be happy to implement if modifying it is possible.

I suspect this is something we can try to implement on Linux at least.
