A friend of a friend brought us this recipe, and Tarik fell in love with it. Pro Tip: Do not use any version of normal rice in this recipe.
- 3 medium carrots, chopped
- 5 stalks celery, chopped
- half of an onion, chopped
- 3 cloves garlic, minced
- 1 cup uncooked wild rice
- 8 ounces fresh mushrooms, sliced
- 4 cups vegetable or chicken broth
- 1 teaspoon salt
- 1 teaspoon poultry seasoning
- 1/2 teaspoon dried thyme
- 6 tablespoons butter
- 1/2 cup flour
- 1 1/2 cups whole milk
- 1/2 lb chicken breast (optional), cubed
- In a piping hot pan, add a little bit of oil and brown the mushrooms evenly. If using chicken, brown the cubes separately.
- Preheat an instant pot, add remaining veggies. Saute until onions are transparent.
- Add mushrooms, chicken, rice, herbs, spices, and stock. Close instant pot and pressure cook for 45 minutes. Vent pressure when done.
- In pan, melt butter, add flour and whisk for 10 minutes over med-high heat to make a blond roux.
- Add roux and whole milk to soup, heat for another 5 minutes to allow soup to thicken.
