Learned this in a cooking class recently. Simple and Delicious.

3 pita, cut into cubes and split

4 tomatoes, diced

6 scallions, finely chopped

6 radishes, julienned

2 packed cups parsley, chopped

1 packed cup fresh mint, minced

2 tbsp pomegranate molasses

1/4 cup lemon juice

1/3 cup olive oil
-
3 cloves garlic, grated

2 tsp sumac

1 tsp salt

1/2 tsp pepper

1/3 cup pomegranate seeds, optional
- Preheat oven to 425. Toss pita with a few tables spoons of olive oil, salt, and sumac. Spread onto a baking pan. Bake for 7-10 minutes.
- Combine first set of ingredients in a large bowl.
- In a smaller bowl mix together second set of ingredients. Set aside.
- When ready to serve, add dressing, pita, and pomegranate to large bowl.
Can also be made with 2 diced and roasted eggplants
