Once there is decent Python support, we should see how one could write a data loader for an open source ML weather model, like GraphCast or NeuralGCM.

We should able to do that without python support as well. What we can plan is to have a catalogue(single/multiple) and load the tables directly from it. https://dynamical.org/catalog/ this one you mentioned earlier somewhere can be a good start.
