[chore]: Document Elasticsearch index alias setup without Docker #7994

Requirement
Instead of the daily indices, I'd like to use index aliases. The setup is documented on https://www.jaegertracing.io/docs/2.dev/storage/elasticsearch/, but assumes Docker.
I found that jaeger-es-index-cleaner and jaeger-es-rollover binaries - which are contained in said Docker containers - are also published as standalone assets, starting with release v2.14.0 of a month ago. (Coincidence?)
Side note: for inexperienced users, it might be unclear whether ILM (https://www.jaegertracing.io/docs/2.dev/storage/elasticsearch/) is optional (i.e. whether it's an alternative approach to roll over / clean described above).
