[Proposal] Refactor unit tests that require environment logic

Proposal

Some unit tests for the IK, curobo, and mimic scripts require access to environment logic. Environment-based tests can be moved into the mimic folder while we keep functional-specific tests that are standalone from environments in the core folder.
