Can run the minimal examples

Description

As the product owner of the tool, I want to ensure that the tool works properly by being able to demo it on the minimal examples.

Acceptance Criteria

• The tool works properly on the escrow example (plutus emulator)
• The tool works properly on the escrow example (cooked emulator)
• The tool works properly on the vesting example
• The tool works properly on the minimal lotto example #16
• The tool works properly on the governance example
