Default Entity & Edge Types Unclear

From the docs, it seems that Zep should process episodes using the default entities/edge types assuming one does not add any additional custom types. However, after creating a new project and adding a simple text episode "Coca Cola is a soda company" the created node is simply marked as "Entity" in the "View Graph" UI. I further confirmed that it is not marked as a "Organization" or other default entity type by making a search query. It is simply labelled with "Entity". This is quite confusing when looking to build an MCP server that works with the default types and potentially adds custom types in the future.

One theory I have is that the default types only apply to "message" based episodes or similar. Appreciate any support on this as the Discord link does not work for me.
