Roll back workaround for LDK log's Cargo features causing the build to fail

The workaround is introduced in PR #61, commit https://github.com/getAlby/ldk-node/pull/61/commits/ce17cd7da00c0e0c573c75da4733f786de08f6b5

The issue is caused by stricter Cargo feature checks enabled in Rust 1.84. Discussed in https://github.com/lightningdevkit/rust-lightning/pull/3425, fixed in https://github.com/lightningdevkit/rust-lightning/pull/3431
