[OP Stack Deployment] Invalid usage of "latest" label in docker images repository

Issue Description

Wanted to setup a Nethermind op-stack node on op-mainnet but just noticed that latest label has changed to possibly some unstable version of op-node.

Isn't "latest" label supposed to be used on stable version so on 1.10.3? 10.4 throws errors:
