outdated couchdb:3.3 #6

Hello,
The couchdb version in docker-compose.yml is couchdb:3.3, which is a bit old (Dec 2023). Also security support has ended with the release of couchdb:3.5 this month, see CVEs policy.
Would you consider upgrading self-hosted cozy to support a newer CouchDB ?
