Handle canceled contexts

There are times when the proxy becomes unresponsive and requests to the MCP server hang

Checking the logs, this error is displayed:

```sh
http: proxy error: context canceled
````

We should try to determine what causes this and handle it correctly so that the proxy does not become unresponsive.
