There could be a lot of value in creating a script that runs periodically that gathers data about a LORIS instance.

Data could include:

We have the ability to send emails from LORIS to a centralized location where this could be managed.

Redcap does this via a Config setting where admins opt-in to have their instance send metrics silently and periodically to Redcap central org, as I mentioned in my talk last year.
It's a fairly seamless way to handle the consenting/setup, with informed consent on what is/isn't being shared.

While not exactly the same thing, I think it's been discussed in the LORIS meeting that the use case (gathering project statistics for reporting) is covered by #9518
