[Bug]: Coverage period fails when viewing data more than 5 years old

What happened?

If I go back more than 5 years from today, the coverage period for a layer is not displayed in the timeline or legend, and the values showed on hover over the selected date in the timeline is incorrect.

I know this is due to an earlier decision to only build an available date array for 5 years of data but the resulting artifact in coverage period is new and was noticed by the team in Mozambique.

What are our options to address this?

I'm less familiar with our current date handling than @laurentS so very curious for his thoughts as well.

This is a good demonstration of how hard it is to know the later use-cases during preprocessing. I was thinking this could be a good opportunity to shift from always relying on pre-processed date arrays stored in redux to as-needed client-side-only "queries" that go directly to the GetCapabilities response. We'd need some utility methods to help with parsing of course but the important part is allowing access to the full source of truth. Maybe easier said than done?
