Fan Control for Dummies? Help!

I've installed Fan Control and stepped through the Assisted Setup OK. But now what? Yes, I RTFM, but I have no idea how to set up fan curves for each individual fan. There are over a dozen temperature sources available. Which should I use? What temps are ideal/optimal?

Is there another assisted setup available to create baseline, auto fan control? Quiet at idle and spin up the fans under load? Or a "For Dummies" doc or post somewhere?

Youtube is your friend. Type in FanControl tutorial in there, there a quite a few good ones that hold your hand along the process.
