In testing publication of OCO-2 and OCO-3 datasets, I will need help with some clean up items:

Removing data from the original location (oco3-sam-cogs) - most of these files are fine but a few were failing and causing the whole workflow to fail (see these PR comments for more information)
Deleting the original collection https://staging.openveda.cloud/api/stac/collections/oco3-sam-cogs
Remove data and the directory veda-data-store-staging/oco3-co2-sif-cogs (incorrect naming, assuming a file does not have both CO2 and SIF)

Those are the only cleanup tasks for now but I thought to leave this open in case there are any more clean up items (I hope not!)
