Update Python .py to align with schema changes

Depends on: #848

DoD:

• ddo_transform python package transformation logic aligns to new data and schema changes from data generator
• Unit tests are updated, including any test data in the repo.

Note:

• Schemas are now part of lakehouse_ddls.yaml implemented in Create initial version of notebooks #862 . Update the file as needed and run the notebooks (nb-010-setup.ipynb for recreation of the schemas).
