Update Lakehouse and Warehouse table creation notebooks to align with schema changes

DoD:

• Table creation scripts are update to reflect the new schema in the data generator
• Scripts create tables for Lakehouse and Warehouse

Related to #843

NOTES:

• nb-010-setup.ipynb is created as part of Create initial version of notebooks #862 which creates the schemas and tables using lakehouse_ddls.yaml. Update this file as per new schema and execute nb-010-setup.ipynb to see the changes.
