feat: use dynamic versioning from package.json in build workflow

- Extract version from root package.json instead of hardcoding
- Use semantic version tags (v1.6.0) instead of build numbers
- Apply consistent versioning across all platforms
- Update MSI installer to use dynamic version
- Clean up release naming and make it more professional
